Grilled Buffalo Chicken

I’ve been testing out different chicken marinades for the last few months and here is another one! Alex really loves spicy anything so I thought I’d try out a buffalo chicken. I made something like this in the crockpot a while ago but wanted to make a grilled version for summer nights when even a crockpot is too hot to have going inside.

You will want to let this dish marinade for at least 12 hours. The longer the better though. By the time we ended up grilling ours they had been sitting in the marinade for about 24 hours. If you begin with frozen chicken breasts you’ll want to marinade/defrost for about 36 hours.

Grilled Buffalo Chicken

  • 4-6 Chicken Breasts (defrosted)
  • ¼ Cup Olive Oil
  • ¼ Cup Buffalo Sauce
  • 1-2 Teaspoons Cayenne Pepper

Whisk the marinade ingredients together. Pour over chicken breasts.

Let the chicken sit for 12-24 hours before grilling.

When ready to grill, preheat your grill and cook the chicken until the juices run clear.
